Aji's wine list is comprised of selections from South America's pre-eminent wine making countries - Argentina and Chile - and includes a distinctive Spanish presentation characteristic of its most respected regions.
Grape growing conditions are so ideal and the cost of vineyard land and labor is so reasonable, that Argentina and Chile have become two of the world's leading producers of wines with an extremely high ratio of value to price. Changes within the Argentine and Chilean wine industry in the past decades have been slow but steady, including modern winemaking tools and the influx of foriegn capital and renowned winemakers from throughout the world all contributing to the evolution of wineries beginning to garner praise the world over.
Today, Spanish wines are truly being elaborated - top Spanish winemakers have catapulted themselves to a new level of quality in recent years. Several of Spains most notable varietals are represented here.
