Aji’s Wine List comprises selections from South America’s preeminent wine-making countries, Argentina, Chile, Uruguay and notable varietals from Portugal and Spain.
Grape growing conditions are so ideal and the cost of land and labor are so reasonable that Argentina and Chile have become the world’s leading producers of wines with an extremely high value to price ratio. The past decades have seen relatively rapid changes within the Argentine and Chilean wine industries, with modern winemaking tools, an influx of foreign capital, and renowned winemakers from throughout the world all contributing to the evolution of wineries beginning to garner praise the world over.
Today, Spanish wines are truly being elaborated -- top Spanish winemakers have catapulted themselves to a new level of quality in recent years. Several of Spain’s most notable varietals are represented here.
